Instant Pot Shredded Chicken

The Instant Pot has been all the rave lately, and can you really blame us?! I don’t care if you’re a parent of four children or you’re in the midst of newborn days, the Instant Pot saves lives.

I will admit I was very intimidated. I didn’t have a very good relationship with my slow cooker. It burned everything, it took forever, I was deathly afraid it would burn my house down and that thing was heavy as hell. So here comes Instant Pot to save the day, literally, your favorite meals in under 25 minutes!

That was music to my ears! When I realized I could place frozen chicken and pressure cook for 20 minutes, I was amazing. Hard boiled eggs in 4 minutes, amazed. I still have to peel the damn things but nonetheless. The options are endless and I’m so excited to start sharing some of my favorite recipes with you!

So first up; Instant Pot Shredded Chicken. Easy enough. Not kidding. It’s 3 ingredients and you will never look back.

Here’s what you need:

  • 2 Chicken Breasts
  • 1/2 cup of Chicken Broth
  • Seasoning packet of your choice: I love using a taco mix or ranch dip mix.

Place everything in your pressure cooker and set to manual pressure for 20 minutes and make sure the vent is sealed. If you’re new to the instant pot world, it takes about 15-20 minutes for it to pressurize (during that time it will say “on”). You’ll probably curse a little bit and think you’re doing it totally wrong, you’re not and yes really, don’t open the lid. Lesson learned.

Now sit back and watch an episode of Dateline. Yes, I know you watch those crazy ass shows like myself.

When the 20 minutes is up, release vent and remove lid when steam is finished. I’m telling you my little secret, I grab my hand held mixer and keep it on low-speed, this will shred your chicken in 2 minutes. So easy. Mix the chicken and juices together, add a little more seasoning and that’s it! Voila! Instant Pot Shredded Chicken!

    I don’t have an instant pot, but every time I have tried making chicken in my crock pot it has gotten dry. However, this recipe looks super easy and good.

    I love my instant pot, it makes life so much easier. I can’t wait to use it in addition to my slow cooker this Thanksgiving so I can have at least two dishes to set and forget! This recipe is so simple, I can’t wait to try and make some variations on it. Thanks for sharing!
