I’m starting my postpartum fitness journey and the best way for me to stay on track is meal prep! I’m sharing my easy meal prep for moms, because lets be honest, we rarely have time for anything!Â
Now that I have been cleared by my doctor to start exercising again, I’m ecstatic to get back to a healthy lifestyle. I let myself slip a little bit during my pregnancy with Elliott. I was in great shape before I got pregnant, but then I was struck with morning sickness, stomach flu and an abundance of sinus infections throughout my entire pregnancy. Needless to say, working out was not on my agenda.

The whole process took me about one hour. Meal prepping can seem a little daunting, but I found it kinda fun! I unpackaged all the bento boxes and placed them on my counter. Since I was prepping for myself and my husband, I wanted to make sure I mad enough for 7-10 days for each of us.
What I tried to focus on was having a protein, a vegetable and a grain/starch. Take a look below on ways you can mix it up and have fun with your meals. Get creative! Chicken, broccoli and rice can get very boring!
So what I usually like to make the most is shredded chicken in my instant pot. Check out that recipe here. It’s so easy and I like the texture better than just a plain chicken breast. My husband enjoys broccoli and brown rice. I switch it up for myself and do black beans and quinoa.
The easiest way to prep is creating an assembly line like I mentioned above. I start my Instant Pot Chicken for 20 minutes, 6 cups of brown rice in the rice cooker for 25 minutes and steam my Costco bag of vegetables. Take a seat and enjoy some coffee or binge watch an episode of Dateline. The bento boxes are perfect to keep everything separated if your OCD like me 😀
Once everything cools off, I just snap on the lids and make room in the freezer. I keep two in the fridge and every night I take two out of freezer and thaw out in the fridge for the next day.
That’s it! Meal prepping can seem like such a chore, but if I give myself one hour a week, I can create 20 meals all together for my husband and myself. I’m ready to get this body back in shape!
