Happy November my friends! I think this is one of my favorite months. I love the hustle and bustle of the holidays but I am all about the comfort food.
Easy Baked Acorn Squash Recipe
Acorn squash is one of our go-to vegetables for the winter. It is so incredibly easy to prepare and bake, and it’s even more delicious to eat! We usually prep this with chicken and Oliver eats it right up. There is something I love about warm vegetables on a cold day!
What you need:
- Acorn Squash
- 2 tablespoons butter
- Brown Sugar
Prepare your oven at 400 degrees. Slice your squash in half and scoop out the seeds. Rub butter through the entire inside of the squash and then sprinkle your brown sugar accordingly. Line a baking sheet with foil and place in the oven for 50-60 minutes.
To check if squash is cooked through, poke a knife and it should be pretty soft. I then usually like to scrape the insides and make a little mashed acorn squash. You can easily peel this off the skin and mash together with the brown sugar, or use the skin as a bowl and scoop right from your plate!
